This is the first Lactic Honey that C4 has every bought in, Bernardo is an innovator in processing in the region and experiments with all processes at this farm. He has built infrastructure to support meticulous implementation of the most progressive practices here. We can't wait to try more of Bernados coffee. The honey process, involves drying coffee beans with a certain amount of fruit pulp (mucilage) remaining on the beans. This coffee has an added step of lactic fermentation which uses lactobacillus bacteria to break down the sugars in mucilage which helps creates new unique and interesting flavours, the coffee is then laid out to dry.
