We're kicking off our 2025 Special Release schedule with one of our most exciting and experimental offerings yet: a Green Apple coferment from Jairo Arcila via Finca Santa Monica. The cherries undergo a dry anaerobic fermentation for 72 hours with the pulp intact. During fermentation, real green apple and wine yeast are introduced to enhance the flavor profile and transform this coffee into a one of a kind, extremely unique experience. After fermentation, the cherries are pulped and dried on raised beds until they reach the optimal moisture level. Castillo, the varietal used for this microlot, was developed by the Federación Nacional de Cafeteros. It is recognized for its high productivity and resistance to coffee leaf rust, making it a resilient and reliable choice for quality-focused producers.
