We combine our flagship Honey Shine Amber with whole baking spices in barrel to create a BC craft expression of a dark-spiced rum. This seasonal turned staple will be sure to have you singing “Yo-Ho!” The Process We ferment wild-gathered BC honey into a dry mead, distill it twice, and mature it our Ancient Grains ‘Alternative Whisky’ barrels with vanilla, cinnamon, clove, nutmeg, black pepper, allspice, and star anise. Note: A small amount of distillers caramel is added for colouring only. Tasting Notes A beautiful balance of cinnamon, nutmeg, vanilla, and liquorice.
